From Pakistan to Tokyo: A Coffee Enthusiast’s Journey to Master Brewing and Roasting at Tasse Coffee Roastery

At Tasse Coffee Roastery, we take pride in welcoming passionate coffee lovers from all corners of the globe. Recently, we had the pleasure of hosting Ali, a dedicated coffee enthusiast from Lahore, Pakistan, who traveled to Tokyo to deepen his knowledge of coffee. Ali’s goal was to master two essential aspects of coffee: SCA Brewing Professional and SCA Roasting Foundation, as part of his plan to elevate his coffee expertise and contribute to Pakistan’s emerging specialty coffee scene.

Brewing Professional: Mastering the Art of Extraction

Student's journey started with the SCA Brewing Professional course, one of the most advanced modules in the Specialty Coffee Association’s curriculum. Although student already had experience with manual brewing methods like pour-over and AeroPress, he wanted to sharpen his skills and understand the scientific principles behind perfect coffee extraction.

Throughout the course, student delved into advanced brewing techniques, learning how to adjust grind size, water temperature, and brew time to bring out the best in every cup. The hands-on sessions were particularly exciting for him, as he experimented with different brewing methods under the guidance of our expert instructors. Student quickly learned to troubleshoot and refine his techniques, ensuring that he could deliver consistent, high-quality coffee every time.

The course also emphasized the balance of flavors—how to control acidity, sweetness, and bitterness to create a harmonious cup. By the end of the course, Ali had not only improved his brewing skills but also developed a deeper appreciation for the complexity and artistry behind every brew.

Roasting Foundation: The Art and Science of Roasting

After completing the brewing course, Student moved on to the SCA Roasting Foundation course. This entry-level roasting course provided him with a solid understanding of the roasting process, from green beans to finished product. Student was eager to learn how to control roasting variables and develop the flavors that make each coffee unique.

The Roasting Foundation course covered the basics of time, temperature, and airflow—key factors that determine the success of any roast. Student learned how to interpret roast curves, manage first and second crack, and understand the stages of roasting. Under the watchful eye of our instructors, Student practiced roasting on a drum roaster, where he experienced firsthand how small changes in roasting technique could lead to vastly different flavor profiles.

Through the course, Ali gained confidence in his ability to roast coffee beans to highlight specific characteristics, whether fruity, nutty, or chocolatey.
