CSP Sensory Module - Foundation

Through this Foundation course, participants will enhance their understanding of basic sensory evaluation and its importance, the differences between specialty and commercial coffee, and aroma groups.

  • Importance of sensory evaluation
  • Comparing specialty coffee to commercial coffee
  • Understanding the Flavor Wheel
  • Basic understanding of aromas
  • Verifying coffee quality through Sensory
  • Understanding of cupping

Prerequisite: None Upon passing the written and practical exams, a license will be issued.

Duration: 1 day

CSP Sensory Module - Intermediate

This course focuses on the most important aspects of specialty coffee, including understanding various organic acids and the sensory evaluation of coffee based on origin and grade.

  • Objective expression of aroma and taste
  • Understanding the Flavor Wheel
  • Understanding and method of cupping forms
  • Organic acids
  • Triangulation tasting
  • Caffeine
  • Sample roasting protocols
  • Sensory evaluation of roasting errors
  • Sensory evaluation based on processing

Prerequisite: Sensory Foundation Upon passing the written and practical exams, a license will be issued.

CSP Sensory Module - Professional

  • Sensory evaluation
  • Understanding of the Coffee Aroma Kit
  • Understanding of the Wine Aroma Kit
  • Analysis and practice of organic acids
  • Flavor Wheel (objective language use)
  • Understanding of cupping forms
  • Diverse practical cupping experiences
  • Cupping for defects
  • Practical cupping with various roasting profiles
  • Continental cupping
  • Cupping by processing
  • Triangulation
  • Sensory evaluation by extraction methods

Prerequisite: CSP Roasting Module Intermediate Upon passing the written and practical exams, a license will be issued.
