Our workshop, located in the heart of Tokyo, offers an authentic and immersive experience in professional coffee brewing. You’ll learn from our expert baristas who will guide you through each step – from coffee knowledge to the final latte art pour. Our roastery, designed with soothing natural wooden tones, provides a serene environment for the perfect learning experience.

Course Structure:

Lesson 1: Coffee Knowledge and Brewing

Introduction to Coffee Basics and Sensory Experience:

• How to choose coffee beans that suit your taste based on origin and processing methods

• Basic methods for tasting coffee beans

• Application and techniques of the flavor wheel

• Understanding different coffee regions, varieties, and flavors

Hand Drip Coffee:

• Usage of various hand drip coffee tools

• Learning different hand drip techniques such as pulse pouring, and balancing sweetness, acidity, and bitterness

• Importance of temperature and scale

• Relationship between extraction and concentration

Lesson 2: Espresso

Espresso Basics:

• Differences and applications of home and commercial coffee machines and grinders

• Techniques for making various espresso drinks

• Learning to adjust the appropriate flavor, texture, and aftertaste of espresso

• Differences between blends and single-origin beans

Lesson 3: Latte Art

Introduction to Latte Art:

• Teaching according to the Coffee Latte Art Certification System standards

• How to froth milk using home and commercial espresso machines

• Learning basic latte art techniques, starting with the heart pattern

• Practicing various latte art designs
